Chef's Note
A classic recipe explained by Chef Karl Rodekirchen of "Le Jardin" restaurant in Zurich
Ingredients for 10 servings
- 500 g (18 oz.) dark/vanilla couverture Chocolate
- 100 g (1/2 cup) sugar
- 1 liter (4 cups) whipping cream
- 30 ml (2 tbsp.) Jamaica rum
- 3 egg whites
  1. Cut the chocolate into small pieces; place in a bowl or the upper section of a double boiler; pour in the rum and melt over simmering water; cool to lukewarm;
  2. meanwhile, whip the egg whites and sugar to stiff peaks;
  3. whip the cream to stiff peaks;
  4. slowly pour the melted chocolate into the cream;
  5. gently fold in the egg whites until smooth and well combined;
  6. pour into dessert coupes and refrigerate.
