Cod with Curly Green Cabbage Recipe

Ingredients
For 4 servings
- 1/2 head of curly green cabbage
- 4 square-cut portions of fresh cod, 120 g / 4 oz. each
- 100 g (3 1/2 oz.) shallots
- 2 tbsp. olive oil
- 4 Golden Delicious apples
- 70 g (2 1/2 oz.) currants
- 250 ml (1 cup) heavy cream
- A pinch of saffron
- 50 ml (3 tbsp.) white wine
- 1 glass of water
Method
- Slice the cabbage finely after first removing the large veins.
- Heat the olive oil in a skillet; add the shallot and cabbage and sauté. Add 1 glassful of water. Cover and simmer for 5 minutes.
- Add the currants and continue cooking 10 minutes longer.
- Peel the apples and cut into 6 wedges. Sauté them in a little fat. Brown on each side for 3 minutes.
- Place the portions of cod in a baking dish. Add the white wine, salt and pepper and cook in the oven for 10 minutes.
Making the sauce
- Heat the cream over low heat for 3 minutes, then add a pinch of saffron at the end of the cooking time.
Presentation
- Place the cabbage in the centre of the plate, surrounded by apples.
- Place the fish on top of the cabbage.
- Spoon a little of the sauce overtop.
