Cod with Curly Green Cabbage

For 4 servings
- 1/2 head of curly green cabbage
- 4 square-cut portions of fresh cod, 120 g / 4 oz. each
- 100 g (3 1/2 oz.) shallots
- 2 tbsp. olive oil
- 4 Golden Delicious apples
- 70 g (2 1/2 oz.) currants
- 250 ml (1 cup) heavy cream
- A pinch of saffron
- 50 ml (3 tbsp.) white wine
- 1 glass of water
  1. Slice the cabbage finely after first removing the large veins.
  2. Heat the olive oil in a skillet; add the shallot and cabbage and sauté. Add 1 glassful of water. Cover and simmer for 5 minutes.
  3. Add the currants and continue cooking 10 minutes longer.
  4. Peel the apples and cut into 6 wedges. Sauté them in a little fat. Brown on each side for 3 minutes.
  5. Place the portions of cod in a baking dish. Add the white wine, salt and pepper and cook in the oven for 10 minutes.

Making the sauce

  1. Heat the cream over low heat for 3 minutes, then add a pinch of saffron at the end of the cooking time.


  1. Place the cabbage in the centre of the plate, surrounded by apples.
  2. Place the fish on top of the cabbage.
  3. Spoon a little of the sauce overtop.
