These sauces are served as condiments at Montahnas Restaurant in Madeira to accompany hors-d’oeuvre, grilled meats, etc.

Ingredients
Molho Verde
- the flesh of 2 green tomatoes
- the flesh of 1 avocado
- 1/4 onion
- 1 tbsp. lemon juice
- 1 tbsp. olive oil
- Salt and pepper

Molho Vermelho
- the flesh of 2 ripe tomatoes
- 1/4 onion
- 1 seeded red pepper
- 1 tbsp. lemon juice
- 1 tbsp. olive oil
- Salt and pepper
- 1 small hot chili pepper (optional)
Method

Molho Verde – Mild Green Tomato and Avocado Sauce

  1. Blend all ingredients in a blender.

Molho Vermelho – Mild or Hot Tomato Sauce

  1. Blend all ingredients in a blender.
