Creamy Rice Pudding

For 5-6 servings

- 750 ml (3 cups) cooked Rice
- 2 tbsp. butter
- A small pinch of salt
- 750 ml (3 cups) milk
- 125 ml (1/2 cup) sugar
- 75 ml (1/3 cup) raisins
- 2 tbsp. grated lemon zest
- A small piece of cinnamon, grated
- 1 tsp. vanilla
  1. Combine all the ingredients except the vanilla in a large saucepan.
  2. Cook over medium heat for 25-30 minutes until the mixture thickens and becomes creamy, stirring frequently.
  3. Remove from the heat and mix in the vanilla.
  4. Pour into dessert dishes. Serve hot or cold.
