Crème caramel with Madeira Recipe

Pudim de veludo a Madeira
This is the Madeiran version of the famous crème caramel. It is usually made in a large ring mold, often embossed with attractive designs. You can find this custard throughout Portugal, served without garnish.
Ingredients
For 4 servings
- 6 eggs
- 200 g (1 cup) granulated sugar + 100 g (1/2 cup) for the caramel
- 500 ml (2 cups) milk
- zest of 1 lemon
- a little butter
Caramel
- 100 g (1/2 cup) sugar
- 3 Tbsp. water
- 1 Tbsp. butter
Garnish and finishing
- a small wine glass of Madeira
- 1 banana
- Whipped cream
Method
- In a saucepan, heat the milk with the lemon zest.
- Beat together the eggs and sugar.
- Add the hot milk to the egg-sugar mixture while whisking briskly.
- Line a mold with caramel, tilting the mold so that the caramel is evenly distributed.
- Pour the egg mixture on top. Place the mold into a pan and add boiling water to reach 1/3 of the way up.
- Cook in a 100° C (210° F) oven for about 35 minutes or cook directly in a water bath for 20 minutes. Chill and unmold.
Caramel
- In a small saucepan, dissolve the sugar with the water and butter and cook to a pale caramel color.
Finishing
- Top with whipped cream and sliced bananas, pour the Madeira over top and let it soak in before serving.
