Cucumber in Sour Cream and Dill Recipe

Chef's Note
The Polish name for cucumbers in sour cream is "mizeria" literally meaning "misery," referring to the dish being conceived by peasants, who were nicknamed "the miserable ones" by the have-gots! This delightful, cooling salad is anything but "misery." It's a great accompaniment to pork, ham, chicken, fish, just about anything. Choose thin cucumbers with small seeds or the seedless variety.
Ingredients
- 2 cucumbers, peeled and seeded
- 200 ml (3/4 cup) sour cream
- 2 tbsp. salt
- 2 tbsp. spirit vinegar
- 1 tbsp. chopped fresh dill
- 1 tsp. sugar
Method
- Peel and halve the cucumbers lengthwise; remove the seeds by running a knife between the flesh and the seeds; sprinkle with salt and let drain for 15 minutes;
- rinse under cold water; place on paper towel, then cut into small dice;
- combine all the ingredients in a bowl ; serve with dill sprigs.
