For 6 servings

- 3 Eggs + 1 egg white
- 500 ml (2 cups) milk
- 250 ml (1 cup) sugar
- A pinch of nutmeg or a few drops of vanilla
- Pastry (pâte brisée) for a single crust pie
  1. Preheat the oven to 180°C / 350°F;
  2. heat the milk in a saucepan; cool to lukewarm;
  3. in a bowl, combine the eggs, sugar and nutmeg; gradually whisk in the warm milk;
  4. roll out the pastry and line a pie plate; crimp the edges; brush with beaten egg white and bake for 2 minutes: this step is essential to seal the crust and prevent the pastry from becoming soggy once you add the liquid filling;
  5. remove from the oven; pour in the custard; bake for 15 minutes at 180°C / 350°F; increase the temperature to 230° C (450° F) and continue baking until the center is set.
