Fish Cakes Recipe

Chef's Note
In the Magdalen Islands, these cakes are usually made with leftover fish or whatever is on hand. It's an inexpensive everyday dish. You could even use canned fish. On the other hand, you can serve these fish cakes for company by using one part fish, one part potatoes, including salmon or crab, and replacing the onion with chopped green onion or chives.
Serve with tartar sauce.
Ingredients
- Allow 750 ml (3 cups) mashed potatoes
- for 250 ml (1 cup) cooked flaked fish (cod, sole, salmon or tuna)
- Salt and pepper
- Finely chopped onion
- Flour or breadcrumbs
- Butter
Method
- Prepare some mashed potatoes, seasoning them well with salt, pepper and finely chopped onion.
- Add the fish - cod, sole, salmon, tuna - cooked and flaked, in a proportion of 1 part fish to 3 parts potato.
- Form into cakes about 2.5 cm (1" ) thick and 7 cm (3") in diameter.
- Dip into flour or breadcrumbs and fry in butter on both sides. Serve very hot.
