Green Cauliflower with Goat Cheese and Mackerel Rillettes

Ingredients for 4 servings
- 1 green Cauliflower
- 100 g (3 1/2 oz.) fresh Goat cheese
- 1 - 300 g (10 oz.) container of Mackerel (Atlantic Mackerel) rillettes or 300 g (10 oz.) boneless mackerel fillets
- 1 small shallot
- 50 ml (3 tbsp.) liquid cream
- Juice of half a lemon
- Salt and pepper
  1. Peel the shallot and chop finely.
  2. Skin and debone the fish fillets. Steam them for 5 minutes.
  3. Flake the mackerel on a plate with a fork. Add the cream, shallot, lemon juice, salt and pepper. Mix well.
  4. Steam the green cauliflower for 10-15 minutes, depending on the size.
  5. Separate the florets and combine with the fresh goat cheese.
  6. Serve with the fish rillettes in a Japanese spoon or on a slice of baguette.
