Ham with Maple Syrup, Bois-Francs style Recipe

Ingredients
- 1 Ham or Country Ham, 3-4 kg (8-9 lb.)
- 3 liters (12 cups) water or maple sap
- 250 ml (1 cup) raisins
- 250 ml (1 cup) granulated Maple Sugar
- 60 ml (1/4 cup) Maple Syrup
- 60 ml (1/4 cup) apple juice
- 1 tsp. dry mustard
- 2 tsp. cloves or 10 cloves stuck into the ham
Method
- Pour the water and maple syrup into a roasting pan and blend well. Add the ham and simmer for 3 to 4 hours until tender.
- Remove the ham and cut off the excess rind.
- In a bowl, stir the maple sugar, ground cloves (if using) and dry mustard into the apple juice.
- Return the ham to the roasting pan and pour the apple juice mixture over top. Add a cup of the cooking liquid and the raisins. Cook at 150° C (300° F) for 30 to 40 minutes, basting occasionally.
- Serve hot or cold.
