Ham with Maple Syrup, Bois-Francs style

Ingredients
- 1 Ham or Country Ham, 3-4 kg (8-9 lb.)
- 3 liters (12 cups) water or maple sap
- 250 ml (1 cup) raisins
- 250 ml (1 cup) granulated Maple Sugar
- 60 ml (1/4 cup) Maple Syrup
- 60 ml (1/4 cup) apple juice
- 1 tsp. dry mustard
- 2 tsp. cloves or 10 cloves stuck into the ham
Method
  1. Pour the water and maple syrup into a roasting pan and blend well. Add the ham and simmer for 3 to 4 hours until tender.
  2. Remove the ham and cut off the excess rind.
  3. In a bowl, stir the maple sugar, ground cloves (if using) and dry mustard into the apple juice.
  4. Return the ham to the roasting pan and pour the apple juice mixture over top. Add a cup of the cooking liquid and the raisins. Cook at 150° C (300° F) for 30 to 40 minutes, basting occasionally.
  5. Serve hot or cold.
