Ham with Peach Chutney Recipe

Chef's Note
Peach chutney from canned peaches adds an updated condiment to this traditional ham dinner. Serve with steamed broccoli, roasted potatoes and warm rolls.
Ingredients
For 10 servings
- 1 boneless ham, about 2 kg (4 1/2 lb.) (see ham or Country Ham)
Peach chutney
- 225 g (8 oz.) peeled pitted peaches, or 1 - 16 oz. can, drained
- 200 ml (3/4 cup) cider vinegar
- 125 ml (1/2 cup) brown sugar
- 125 ml (1/2 cup) minced onion
- 1 apple
- 1 tsp. pickling spice
- Juice from 1/2 lemon
Method
- Place ham in a shallow pan and roast in 160°C. (325°F.) oven until meat thermometer inserted reads 70°C. (140°F) - about 1 1/2 to 2 1/4 hours.
- Slice ham thinly to serve; serve with peach chutney on the side.
Preparing chutney
- Chop peaches coarsely.
- Combine all ingredients in large saucepan; simmer 20 minutes until thickened slightly. Cool, cover and refrigerate.
- Serve cold or at room temperture with baked ham.
