Make a test: Remove the pan from the heat and make a test on the snow to check for consistency. If it is too hard, add a little water and stir to combine. If, instead, the taffy is too liquid, continue cooking.
Step 1
Fill a large flat tray or bin with snow, packing it down. Set it outside or in the freezer while the syrup comes to temperature.
Step 2 - Cooking
- Microwaves
- Lightly grease the top 1 cm (3/8 in) of the inside of a microwave-safe container. This will keep the syrup from bubbling over.
- Pour maple syrup into the container. Heat maple syrup 7 to 10 minutes in microwave (cooking time may vary according to your machine’s power). Maple taffy is ready when a small amount of syrup dropped into cold water forms a firm ball.
- On the stove
- Lightly grease the top 1 cm (3/8 in) of the inside of a 2-litre (8-cup) saucepan. This will keep the syrup from bubbling over.
- Pour maple syrup into the saucepan. Put saucepan on medium-high heat with a candy thermometer on the rim or its probe in the syrup.
- Bring to the boil. Keep the temperature between 237° and 240° F for about 20 minutes. Important: Never stir the syrup during and after cooking because it may cause the taffy to crystallize. You will know it’s ready when a small amount of syrup dropped into cold water forms a firm ball.
Step 3
Pour the taffy in lines on snow or crushed ice and roll up on sticks for perfect maple lollipops.

You will need the Basic maple taffy + the coating of your choice
At Step 3, once your maple taffy is on your wooden stick, roll it in the coating of your choice and enjoy.
> Sesame seeds
125 ml white sesame seeds
- Preheat oven to 180° C (350° F). Line a baking sheet with parchment paper and spread with seeds. Bake 5 minutes.
- Remove and stir for even browning.
- Return to oven for 5 minutes.
> Coconut
250 ml unsweetened coconut flakes
- Spread coconut flakes on a small baking sheet and brown in a preheated 180° C (350° F) for 10 minutes.
- Mix halfway through cooking time.
> Pecans & cinnamon
125 ml / 1/2 cup whole pecans + 1 Tsp. cinnamon powder
- Spread pecans on a baking sheet and put in a 180° C (350° F) oven for 15 minutes. Allow to cool.
- Chop and mix with the cinnamon.
> Bacon
5 slices of bacon
- Fry bacon in the pan, remove, and place on absorbent paper.
- Cool and crumble.
> Lemon & poppy seeds
1 lemon + 60 ml / 1/4 cup poppy seeds
- Peel and mince the zest of half a lemon.
- Mix with poppy seeds on a dish.
