Chef's Note
Hush puppies are a traditional southern food. They're little fried cornmeal balls served as a side dish with fried fish, or just about anything.
In home cooking, slightly stale cornbread is sometimes crumbled up and used in place of cornmeal in the recipe.
They should be about 1 tablespoon in size.
Ingredients
Ingredients for 24 hush puppies
- 375 ml (1 1/2 cups) Cornmeal
- 125 ml (1/2 cup) all-purpose flour
- 1 tbsp. baking powder
- A pinch each of salt and sugar
- 185 ml (3/4 cup) milk
- 1 egg, lightly beaten
- 2 tbsp. oil + more for frying
- Parsley
- 2 green onions, finely chopped
Method
- combine all the dry ingredients in a large bowl;
- in a small bowl, combine the milk, egg and 2 tbsp. oil; add to the dry ingredients, mixing only until combined; add a little more milk if necessary;
- drop spoonfuls of the batter into hot oil and fry for 3 minutes or until golden brown;
- drain on paper towels; serve hot.
