Spiny Lobster Roasted in Passion Fruit Butter Recipe

Ingredients
- 1 spiny lobster), 800 g / 1 3/4 lb.
- 4 Passion Fruit
- 100 ml (6 tbsp.) white vinegar
- 100 ml (6 tbsp.) dry white wine
- 150 g (5 oz.) butter
- 50 ml (3 tbsp.) oil
- Salt and pepper
Method
- Bring the vinegar and wine to a boil, add the passion fruit pulp and reduce by half over low heat. Season.
- Cube the butter and add to the fruit mixture, whisking constantly until mixture boils. Remove from heat, strain and set aside.
- Halve the spiny lobster, clean, season lightly, drizzle with oil and roast in the oven at high heat. When done, remove from the oven and pour the sauce over lobster.
- Serve hot. Accompany with Creole rice.
