Mahi Mahi with Vanilla Recipe

This recipe is quick to prepare. Serve it with plain white rice or pilaf.
Ingredients
Ingredients for 4 servings
- 4 slices of Mahi Mahi (Dolphinfish)
- 1 fresh Vanilla bean
- 500 ml (2 cups) cream
- Salt and pepper
Method
- In a small saucepan, heat the cream with the vanilla bean, split in half lengthwise; simmer for 5 minutes; season with salt and pepper; infuse for at least 5 minutes over very low heat;
- meanwhile, grill the fish on a barbecue or in a non-stick pan;
- pour the cream over the fish and serve immediately.
