In St. Jean-Port-Joli, Quebec, people come for the boats... but also for this traditional bakery, operated by artisanal baker Jean-Louis Sibuet. Beginning early in the morning, he makes a quintessential maple sugar cream pie that attracts the crowds, as well as organic bread with milk, raisins and maple, that you absolutely must try! Here's a simplified recipe for the maple sugar cream pie. We'll get back to you with the REAL bakery recipe.
Ingredients
Ingredients for 4 servings
- 850 g (2 lb.) brioche dough or puff pastry
- 125 ml (1/2 cup) sour cream
- 125 ml (1/2 cup) whipping cream
- 1 egg beaten with a little milk
- 125 ml (1/2 cup) grated Maple Sugar
Method
- Roll out the dough to a thickness of about 2.5 cm (1") and a diameter of about 30 cm (10-12").
- Combine the whipping cream and sour cream.
- Brush the dough with beaten egg and pour on the cream mixture.
- Finish by sprinkling with grated maple sugar (about 80 ml or 1/3 cup) and bake in a 190° C (375° F) oven for 25-30 minutes.
- Remove from the oven and sprinkle on the remaining grated maple sugar (about 45 ml or 3 tbsp.)
