An original recipe from Le Galopin restaurant in Quebec City, provided by Mario Martel, former chef and co-owner, with Marc Roy, on whom he still drops in once in a while to lend a hand.
Ingredients
Ingredients for 4 servings
- 250 ml (1 cup) heavy cream (35%)
- 250 ml (1 cup) Maple Syrup
- 7.5 ml (1/2 tbsp.) vanilla
- 60 ml (1/4 cup) unsalted butter
- 60 ml (1/4 cup) flour
- 4 pre-baked individual tartlet shells, 10 cm (4") in diameter
- 500 ml (2 cups) crème anglaise
Method
- Bring the cream, maple syrup and vanilla to a boil;
- prepare a roux with the flour and butter; add the maple cream mixture and mix until thickened. Cook for about 5 minutes over low heat.
- Pour the mixture into precooked tartlet shells. Cool.
- Whip 60 ml (1/4 cup) heavy cream separately and top the tartlets according to your whim.
- Refrigerate.
