This sauce is always served in tandem with green tomato and avocado sauce as a condiment in Montahnas restaurant to accompany hors d’oeuvres and grilled meats.

1. Peel the tomatoes; seed the red pepper.
2. Purée all the ingredients in a blender.
3. Correct the seasoning; cover and refrigerate until serving time.
