Morteau Sausage with White Wine (France) Recipe

Morteau is a kind of French smoked pork sausage.
Ingredients
For 4 servings
- 1 tbsp. tomato paste
- 1 knob of butter
- Dry white wine
- Chicken stock
- 1 onion, thinly sliced
- 2 cloves of garlic, minced
- 400 g (14 oz.) whole potatoes
- Salt, pepper, bouquet garni, parsley
Method
- Grill the sausage in a pan in a little butter;
- add white wine and stock to cover; add all the other ingredients except the parsley and simmer for 30 minutes;
- remove the ingredients; place the sausage on a serving platter and surround with potatoes;
- strain the cooking liquid; pour into a saucepan and reduce slightly over high heat; season to taste;
- pour the sauce over the sausage and potatoes; sprinkle with chopped parsley and serve.
