Mussels with Cider and Leeks Recipe

Ingredients
Ingredients for 4 servings
- 2 kg (4 1/2 lb.) Mussels
- 1 medium Leek, cleaned and diced
- 2 shallots, finely chopped
- 4 cloves of garlic, minced
- 2 tbsp. fresh chopped parsley
- 45 g (3 tbsp.) butter
- 300 ml (1 1/4 cup) dry cider
- Salt and black pepper
Method
- Clean the mussels by brushing them well under running water. Remove the beards and discard any mussels that are cracked or that do not close when you rap on their shell.
- In a large pot, sweat the finely chopped leek, shallot and garlic in the butter until tender. Add half the parsley, the mussels and the cider.
- Cover and cook over high heat for a few minutes until the mussels open, shaking the pot from time to time.
- Strain the mussels over a bowl and discard any that have not opened up.
- Divide the mussels among individual bowls or place in a large serving bowl.
- Season the cooking liquid with salt and pepper and pour over the mussels; garnish with a few sprigs of fresh parsley.
