New Orleans Famous Pecan Pie

Chef's Note

This is a classic of southern cooking, associated in particular with New Orleans.

For 1 pie

- 3 large eggs
- 250 ml (1 cup) packed brown sugar
- 250 ml (1 cup) corn syrup
- 1 tsp. vanilla
- 250 ml (1 cup) coarsely chopped Pecan nuts
- A pinch of salt
- Pie pastry for a single-crust pie
  1. Beat the eggs until frothy. Add the other ingredients.
  2. Pour the mixture in the unbaked pie shell and bake in a preheated 350° F. (180°C.) oven for 40-45 minutes.
