No-Bake Cheesecake

Chef's Note

This is a quick, no-bake dessert served at Fajâ dos Padres.

For 4-6 servings

- 250 g (9 oz.) cream cheese
- 250 ml (1 cup) whipping cream
- 250 ml (1 cup) condensed milk
- 2 sheets or 1 packet gelatin
- Graham wafer crumbs
- butter
- oil
- berry coulis

Food processor preparation

  1. Soften the gelatin in a little water.
  2. Place the cream cheese, cream, gelatin and condensed milk in a food processor and process until smooth.
  3. Add a little melted butter to the Graham crumbs; lightly oil a high-sided tart pan and press in the crumb mixture.
  4. Pour the filling into the crust; refrigerate.
  5. Serve with a berry coulis.
