Onion Salad (Piaz Kachumbar)

Chef's Note
This is a traditional accompaniment to tandoori. You can leave out the hot green chili for a milder version, suitable for every palate.
- 3 large Onions, sliced into very thin rings
- 3 ripe tomatoes, peeled and thinly sliced
- 1 small green chili, seeded and finely chopped
- 1 green pepper, seeded and finely chopped
- 1 small red chili, seeded and finely chopped
- 3 tbsp. lemon juice
- 2 tsp. fresh chopped cilantro
- 2 tbsp. dark brown sugar
- 1 big tsp. salt
- 1 tsp. fresh grated ginger
  1. Slice the onions into thin rings; sprinkle with salt and leave them to drain for an hour;
  2. dissolve the sugar in the lemon juice with 1 tbsp. hot water; pour over the onions;
  3. combine all the ingredients; let rest in a cool place for at least 30 minutes before serving.
