Chef's Note
This salad is generally served as an accompaniment to roast chicken.
Ingredients for 4 servings
- 1 firm Papaya
- 2 green apples
- 2 stalks of celery
- 2 slices of pineapple
- 2 tbsp. lemon juice
- 2 tbsp. walnut oil
- 1 tbsp. sesame oil
- 1 tbsp. Indonesian soy sauce or 1 tbsp. soy sauce + 1/2 tsp. molasses
- 1/2 tsp. sambal ulek
  1. Peel and seed the papaya. Cut the flesh into thin strips.
  2. Peel and core the apples. Cut into thin strips.
  3. Slice the celery and pineapple thinly. Combine all the fruits in a bowl and refrigerate.
  4. In a small bowl, combine the two oils, lemon juice and soy sauce; mix well and add the sambal ulek. Toss with the salad just before serving.
