Pasta Salad with Mussels Recipe

This salad is just one of the many uses for the Vinaigrette with Shellfish Jus recipe from Jacques and Laurent Pourcel.
Ingredients
Ingredients for 4 servings
- 1 kg (2 1/4 lb.) farmed Mussels
- 250 g (9 oz.) fusili or other kind of Pasta
- 200 ml (3/4 cup) dry white wine
- 4 shallots
- [Shellfish jus vinaigrette]
Method
- Cook the pasta in boiling water with a pinch of salt and a few drops of olive oil; run it under cold water; drain;
- meanwhile, carefully scrub, rinse and debeard the mussels;
- in a large saucepan, bring the wine to a boil with the minced shallots;
- add the mussels and cook for 3-4 minutes until they open completely; place in a strainer and cool under cold water;
- prepare the vinaigrette;
- divide the pasta among individual bowls; pour the vinaigrette over top and mix together; top with the mussels and serve.
