Peanut Brittle Recipe

Chef's Note
This peanut brittle is a quick treat that you can give as a gift.
Variation
Substitute 500 ml (2 cups) roasted salted cashews or mixed nuts for the peanuts.
Tip
The peanut brittle will keep for 5 days in an airtight container at room temperature.
Ingredients
- 125 ml (1/2 cup) butter
- 250 ml (1 cup) granulated sugar
- 60 ml (1/4 cup) corn syrup
- 375 ml (1 1/2 cups) salted peanuts
Method
- Combine the butter, sugar and corn syrup in a saucepan. Melt over medium heat, stirring with a wooden spoon, until the mixture is smooth and bubbling. Cover and simmer for 1 minute.
- Add the peanuts and increase the heat to medium-high. Simmer uncovered for 5 minutes, stirring, until the peanuts are golden and the syrup is golden-brown.
- Pour the mixture in a thin layer on a large baking sheet covered with greased foil. Let cool. Once it has hardened, break into pieces.
