Plantain Pancakes, Caribbean-Style Recipe

Chef's Note
These pancakes are served hot as a side dish with fish or meat.
Ingredients
- 500 ml (2 cups) flour
- 3 firm yellow Plantains
- 1 tbsp. baking powder
- 2 tbsp. butter
- A pinch of salt and white pepper
- Oil for frying
Method
- Peel the plantains and cook in boiling water until tender, about 30 minutes;
- chop the plantains coarsely; mash with the butter, either by hand or in a blender;
- season with salt and pepper; add the flour and baking powder; cool;
- with your hands, form into little pancakes about 2.5 cm (1") in diameter;
- fry in hot oil on both sides until nicely browned;
- drain on paper towels and serve hot.
