Potato Gratin Recipe

Ingredients
For 4 servings
- 1 kg (2 1/4 lb.) yellow-fleshed Potatoes
- 2 eggs
- 500 ml (2 cups) milk
- 125 ml (1/2 cup) cream
- 125 g (4 oz.) ham, cut into strips
- 125 g (4 oz.) smoked bacon, in small pieces
- 125 g (4 oz.) Emmenthal cheese
- 50 g (3 tbsp.) butter
- Salt and pepper
Method
- Peel and thinly slice the potatoes;
- wash the slices and pat dry; season;
- cook the bacon bits gently in a skillet;
- butter the bottom and sides of a gratin dish;
- place the potato slices compactly into the dish, filling it to within 1-2 cm of the top, and inserting the ham and bacon between the potato layers;
- pour on the milk and cream; season with salt and pepper;
- dot the top with butter; cover with grated Emmenthal;
- cook in a moderate oven for 2 hours.
