Pound Cake French Toast with Strawberries Recipe

Ingredients
For 4 servings
- 8 nice slices of all-butter pound cake
- 500 ml (2 cups) milk
- 2 eggs
- 20 g (4 tsp.) sugar
- 500 g (18 oz.) strawberries
- a few fresh mint leaves, stems removed
Method
- Combine the milk, eggs and sugar in a bowl.
- Soak the 8 slices of pound cake in this mixture, leaving them only for a few seconds so that they don't fall apart when cooked.
- In a hot non-stick pan, cook the pound cake slices for 2 minutes on each side.
- In a saucepan, sauté the halved strawberries over high heat, then reduce the heat and let them cook down into a thick coulis.
- Pour a little coulis into each wide-rimmed plate, then place two slices of French toast on top.
- Place the remaining coulis on top of the French toast and sprinkle with the chopped fresh mint leaves.
