Prune, Apricot and Orange Salad with Bordeaux Wine

Ingredients
Ingredients for 6 servings
- 500 ml (2 cups) Bordeaux wine
- 125 ml (1/2 cup) water
- 150 g (5 oz.) granulated sugar
- Zest of 1 lemon
- Zest of 1 orange
- 1 vanilla bean
- 2 oranges
- 500 g (18 oz.) Agen Prunes
- 250 g (9 oz.) soft dried Apricots
Method
  1. Make a syrup from the water, sugar, wine and split vanilla bean.
  2. Once the syrup is boiling, remove it from the heat and add the zests of the orange and lemon.
  3. Add the prunes, apricots and orange, halved and thinly sliced.
  4. Macerate for 48 hours in the refrigerator before serving.
