Mediterranean-Style Rabbit Recipe
Total time: 30 to 60 minutes
Preparation time: 15 minutes
Cooking time: 45 minutes
Ingredients
For 4 servings
- 4 half-saddles of rabbit
- 4 zucchini
- 2 onions
- 1 clove of garlic
- 1 tsp. herbes de Provence
- 2 tbsp. diced black olives
- 4 tbsp. olive oil
- Salt and pepper
Garnish
- 4 vine tomatoes
- 1 small jar of tapenade
- 2 tbsp. pine nuts
Method
- Cut the zucchini (unpeeled) into rounds. Finely dice the garlic. Peel and slice the onions.
- Place the oil into a Dutch oven and sauté the rabbit for 5 minutes on each side until nicely browned. Set aside.
- Add the zucchini, garlic, black olives and herbes de Provence to the pot. Sauté for 5 minutes over high heat.
- Add the rabbit back to the pot, season with salt, cover and cook for 20 minutes over low heat, adding a little water if necessary.
Garnish
- Halve the tomatoes; cover with tapenade and a few pine nuts.
- Bake for 20 minutes in a preheated 200° C (400° F) oven.
