Refried Beans - Frijoles Refritos Recipe

This dish is found throughout Mexico. It is served as a side dish, for breakfast with sausages, etc.
Ingredients
Ingredients for 6 servings
- 750 ml (3 cups) cooked White Bean or White Kidney Beans, without their liquid
- 375 ml (1 1/2 cups) cooking liquid from the beans
- 6 tortillas
- 2 tbsp. melted lard or vegetable shortening + more for cooking the tortillas
- 1 small onion, minced
- Grated cheese
Method
Method
- Mash the cooked beans to a purée in a mortar;
- cut the tortillas into triangles and fry in lard or shortening; drain on paper towels;
- melt 2 tbsp. lard in a skillet; add the puréed beans and liquid; cook until the liquid has evaporated, stirring constantly;
- serve immediately with the tortilla triangles; sprinkle with grated cheese.
