Salmon with Sorrel MS Recipe

Ingredients
Ingredients for 4 servings
- 4 pieces of Salmon fillet
- 200 g (7 oz.) or 250 ml (1 cup) Sorrel leaves, stems removed
- 6 tbsp. butter
- 125 ml (1/2 cup) heavy cream
- Salt
Method
- wash the sorrel leaves; pat dry with paper towels; cut into strips;
- melt the butter in a saucepan; once it is foamy, add the sorrel;
- cover partially and cook for 2 minutes;
- place the salmon on top; continue cooking until the liquid has evaporated, about another 3 minutes;
- remove the salmon; transfer to plate;
- add a knob of butter and the cream to the sorrel; let thicken; season with salt and garnish the salmon.
