Shoestring potatoes

Chef's Note

The shoestring potatoes are 4 mm / 1/3-inch thick. In size, they are between the regular fries 10-12 mm / ½-inch) and the straw potatoes 2 mm / 1/6-inch.

The shoestring potatoes need 2 oil baths. If you have an electric fryer, it’s time to use it!

For 6 servings

- 1 kilo / 2 pounds potatoes
- oïl for frying
- salt
  1. Peel the potatoes; wash them to remove any particles of dirt or peel and pat dry.
  2. Slice each potato into 4 mm (1/3") thick sticks; pat dry again.
  3. Drop the fries into hot oil at 150°C / 300°F. Fry for 6-7 minutes; drain and let rest for 5-10 minutes.
  4. Meanwhile, increase the heat to 180°C / 350°F and fry the fries again until crisp and golden.
