Sautéed Spinach with Soy and Sesame Recipe

Ingredients
For 4 servings
- 1.2 kg (2 lb. 10 oz.) spinach
- 3 Tbsp. oil
- 6 green onions or 1 shallot, chopped
- 1 tsp. soy sauce
- 2 pinches of sugar
- 2 pinches of salt
- 2 cloves of garlic, crushed
- 1 tps. sesame seeds
Method
- Wash and stem the spinach. Pat dry in a kitchen towel or paper towels.
- Heat 1 Tbsp. oil in a large wok or sauté pan and toast the sesame seeds; drain and set aside.
- Add the remaining 2 Tbsp. oil to the wok and sauté the onions or shallot for 30 seconds.
- Add the spinach. Let the spinach wilt for 2 minutes, stirring constantly.
- Add the soy sauce, sugar, salt and garlic and continue cooking for 3 minutes, stirring constantly. Drain.
- Transfer to a hot serving platter and sprinkle with the toasted sesame seeds.
