Spring Leeks, Italian Style Recipe

Ingredients
Ingredients for 4 servings
- 750 g (1 lb. 12 oz.) Spring Leeks
- Parmesan
- Chives
For the vinaigrette
- 3 tbsp. olive oil
- 1 tbsp. balsamic vinegar
- Salt and pepper
Method
- Cut the leeks almost in half lengthwise, leaving them attached on one side. Cook in boiling salted water for 6 to 8 minutes until tender crisp.
 - When the leeks are cooked, run them under cold water to cool completely.
 - Drain the leeks and pour the dressing over top.
 - Shave some Parmesan using a paring knife. Divide the leeks among 4 plates, sprinkle with the shaved Parmesan and serve immediately.
