Spring Leeks, Italian Style

Ingredients for 4 servings
- 750 g (1 lb. 12 oz.) Spring Leeks
- Parmesan
- Chives
For the vinaigrette
- 3 tbsp. olive oil
- 1 tbsp. balsamic vinegar
- Salt and pepper
  1. Cut the leeks almost in half lengthwise, leaving them attached on one side. Cook in boiling salted water for 6 to 8 minutes until tender crisp.
  2. When the leeks are cooked, run them under cold water to cool completely.
  3. Drain the leeks and pour the dressing over top.
  4. Shave some Parmesan using a paring knife. Divide the leeks among 4 plates, sprinkle with the shaved Parmesan and serve immediately.
