Sweet Green Lentil Cream with Island Flavors

For 8 servings

- 250 g (9 oz.) Green lentils from Berry
- 200 g (7 oz.) brown granulated sugar
- 1 liter (4 cups) heavy cream (35%)
- 4 vanilla beans
  1. Cook the lentils for 30 minutes in 1 liter (4 cups) water with 2 split vanilla beans. Drain the lentils and cook them for 15 minutes in the cream with the other 2 vanilla beans and the sugar.
  2. Purée in a blender and strain.
  3. Chill and serve with vanilla ice cream.
