Fresh tuna from Bellefontaine
Morne Vert mango
- Finely dice the tuna and macerate it for a few minutes in the soy sauce with the sesame seeds. Transfer to a martini glass (image 3).
- Dice the mango and combine it with the tuna (image 2).
- Prepare the emulsion by whisking together the milk and oil; add in the minced fresh cilantro and basil leaves and season to taste with salt and pepper. Pour over the tuna-mango mixture (image 4).
- Finish with some sprouts (image 1).
