Tostones / Flattened Fried Plantains Recipe

Chef's Note
Tostones, without a doubt, is one of Dominican favorite side dishes. It share the recipe with several other Latin American countries, but it holds a special place on the Dominican table.
Shopping - You have to buy green plantains because they are the secret of a successful tostones.
Ingredients
For 4 servings
- 2 unripe plantains
- 125 ml / 1/2 cup oil for frying
- 1 Tbsp. salt or more, to taste
Dip
- 1 ripe tomato chopped
- 4 sprigs parsley
- 1 clove garlic
- 1/4 Tsp. pepper
- 1 Tbsp. olive oil
Method
- Peel the plantains and cut into 2.5 cm / 1 inch thick slices.
- In a deep frying pan heat the oil and fry the plantains till golden. Approx. 5 minutes. Drain and pat dry on kitchen paper towel.
- Flatten the plantain to about 0.5 cm / 1/4". Traditionally, tostones are flattened with a tostonera, a special device created specifically for this culinary purpose. If you don’t own this gadget, do not fret; a large bottom cup works great.
- Fry the plantains again until golden yellow on both sides. Approx. 4 minutes. Drain and pat dry on kitchen paper towel.
- Sprinkle with salt. Serve immediately. They must be eaten hot, crunchy and right out of the frier!
Dip
- Pulse all the ingredients until they are thoroughly blended but not liquefied.
