Creamy Vegetable and Tuna Clafoutis Recipe

Chef's Note
You could add some pieces of fresh goat’s cheese and chopped chives to the mixture.
Ingredients
For 6 servings
- Olive oil
- 2 onions, finely chopped
- 2 cloves of garlic, minced
- 1 can of plain tuna, drained (150 g / 5 oz.)
- 5 green olives, sliced
- 1 small can of tomato paste
- 1/2 green pepper, diced
- 400 ml (1 1/2 cups) partly skimmed milk
- 100 g (3 1/2 oz.) quick tapioca
- 200 ml (3/4 cup) cream
- 1 egg
- Salt and pepper
Method
- Preheat the oven to 180° C (350° F). Butter a baking dish.
- In the olive oil, sauté the onion, garlic, flaked tuna, olives, tomato paste and green pepper for 10 minutes. Season.
- Cook the quick tapioca in the milk as directed on the box, stirring constantly. Cool to lukewarm.
- Whisk in the cream and egg.
- Stir in the tuna-vegetable mixture. Pour into the baking dish.
- Cook in a water bath for 40-45 minutes.
- Cool slightly; serve warm, accompanied by some lamb’s lettuce leaves.
