Tuna Rolls (Maki) Recipe

Ingredients
Ingredients for 4 servings
- 5 sheets of nori
- 625 ml (2 1/2 cups) [prepared sushi rice]
- 1 piece of fresh Tuna, cut into 4 long slices
- Juice of 1 lemon
- 1 green onion, quartered lengthwise
- 4 tsp. mayonnaise
- 4 tsp. cooked tempura batter (optional but adds a nice texture)
- A few drops of Japanese hot sauce like Momiji or Oroshi (optional)
Method
Basic method
- Use a bamboo sushi mat;
- on it, place a sheet of nori (seaweed);
- cover with a thin layer of rice, leaving a 1 cm (1/2") border on the edge facing you - 125 ml (1/2 cup) rice will cover 1 sheet of nori;
- approximately 2 cm from the edge nearest you, spread a 2 cm (3/4") band of mayonnaise mixed with a little hot sauce and lemon juice;
- in the center of the mayonnaise, place a piece of tuna and a strip of green onion; sprinkle everything with a few fried tempura balls (see below);
- with the help of the bamboo mat, roll up firmly;
- cut into 2.5 cm (1") portions.
Tempura
- combine 2 tbsp. flour and 1/2 tsp. baking powder with a little ice water to form a thick batter;
- drop into hot oil; the batter will immediately form little golden balls; remove and drain.
