For 4 servings

- Mixed salad greens (curly, lollo bianco, Romaine, etc.)
- 200 g (7 oz.) curly endive
- 1 small red pepper
- 150 g (5 oz.) bean sprouts
- 1 mango
- 1 basket of cress
- 1 small onion

For the vinaigrette
- 5 tbsp. Kikkoman soy sauce or Kikkoman sweet soy sauce
- 5 tbsp. grapeseed oil
- 2 tbsp. sherry vinegar
- Ground pepper
  1. Make the vinaigrette: combine the soy sauce, oil, vinegar and pepper.
  2. Wash the salad greens, cress, curly endive and bean sprouts.
  3. Cut the greens coarsely. Cut the pepper into small pieces. Peel and cut the mango into pieces. Peel and slice the onion.
  4. Toss everything with the vinaigrette.
