White Beans - Basic cooking technique Recipe

- 1 kg (2 1/4 lb.) shelled white beans
- 2 carrots
- 3 onions
- 2 cloves
- 150 g (5 oz.) smoked bacon
- Thyme, bay leaf, black pepper, coarse salt
  1. Place the white beans in a saucepan and cover with water to 1 1/2 times the level of the beans. Place over high heat. When they come to a boil, skim the surface.
  2. Add an onion pricked with 2 cloves, the 2 other onions thinly sliced, the carrots cut into sticks, the thyme, bay leaf and coarsely chopped bacon. Season with pepper. Three-quarters of the way through the cooking time, add the coarse salt. Cook over medium heat for 30 minutes.
  3. Keep hot.
