Crispy Zucchini Gratin Recipe

Ingredients
For 4 servings
- 500 g (18 oz.) zucchini
- 2 large or 3 small eggs
- 250 ml (1 cup) heavy cream
- 25 g (5 tsp.) butter
- 1 Tbsp. olive oil
- 100 g (3 1/2 oz.) coarse homemade bread crumbs
- salt and pepper
Method
- Preheat the oven to 180° C (350° F).
- Slice the zucchini and sauté in olive oil in a skillet for about 10 minutes. When the zucchini slices are lightly browned, spread them in a gratin dish.
- In a bowl, beat the eggs, then mix in the cream, salt and pepper. Pour over the zucchini.
- Sprinkle with the bread crumbs and dot with butter.
- Bake for about 30 minutes. Serve hot.
