Crispy Zucchini Gratin

For 4 servings

- 500 g (18 oz.) zucchini
- 2 large or 3 small eggs
- 250 ml (1 cup) heavy cream
- 25 g (5 tsp.) butter
- 1 Tbsp. olive oil
- 100 g (3 1/2 oz.) coarse homemade bread crumbs
- salt and pepper
  1. Preheat the oven to 180° C (350° F).
  2. Slice the zucchini and sauté in olive oil in a skillet for about 10 minutes. When the zucchini slices are lightly browned, spread them in a gratin dish.
  3. In a bowl, beat the eggs, then mix in the cream, salt and pepper. Pour over the zucchini.
  4. Sprinkle with the bread crumbs and dot with butter.
  5. Bake for about 30 minutes. Serve hot.
