Buying

Sold in a wheel, or in individual 150 g pieces.

The rind should have a pleasant mushroomy smell and be soft to the touch. 

Storing

Soft-curd cheeses should be served cool, but not too cold.

Store in the vegetable crisper in the refrigerator.

Don't use airtight containers - the cheese needs to be able to breathe to develop its flavor.

Preparing

Remove the cheese from the fridge at least 30 minutes before serving so it develops its best flavor. 

Enjoying

Preferably serve the cheese whole so that it doesn't dry out.

Pair with fresh seasonal fruit, e.g., pears, grapes or walnuts.

Use the right knife
A cheese knife with a serrated open blade makes cutting soft cheeses easier. The two-pronged tip then allows you to serve yourself easily.
