All about Sweet chili pepper > From the market to your plate
You can find the sweet chili in import markets and shops where it's sold fresh (red or green) or as a purée or paste in a jar. Each form has a specific use.
The chilies will keep for several days in the refrigerator crisper.
Freeze as is, without washing.
Preserve in oil or vinegar for longer conservation.
Remove the stem end.
Depending on the desired texture or the recipe, you can seed the chili or retain the seeds.
Mild chilies are often used in salads and dishes with sauces to add flavor without heat. They are a good alternative to the hot "bonda man jak" chili and particularly appreciated by children and more sensitive palates.
They are incorporated easily into "accras," savory dishes and other Martinique foods that typically contain hot chili. They can also be used to flavor fish or meat based dishes in sauce.
